Watermelon – Tomato Soup 06/16/2010

A delicious chilled soup, perfect for hot summer days.

Ingredients – up to taste

watermelon ( mine had almost 3.5 kilos / ~8 pounds)

tomatoes

fresh mint

salt

olive oil

Directions

Peel and cut the watermelon and place it in a food processor with chopped tomatoes and mint leaves. Puree

Pour the soup through a sieve and discard any seeds, leaves and tomato peel.

Season with salt and keep it in the fridge for 30 minutes. Serve sprinkled with olive oil.

      this idea came from one soup I ate while we were on vacation in Central America
      some ideas from friends, some from cookbooks, some from soups I ate at restaurants
      I used my family to have soup everyday and now I have to come up with something new almost every day

    Greetings!
    Great idea! The more for it as watermelon is a very healthy fruit!
    About the Japanese plums used in Umeshu, they are indeed a Japanese variety. They are not edible raw,even ripe, but they are once pickled or marinated as the Japanese found out a long time ago!
